INGREDIENTS
Chicken Souvlakis
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 lemon, zested & juiced
- 1 tsp honey
- 1 tbs olive oil
- 1.2kg skinless chicken thigh fillets, cut into chunks
- 200g cherry tomatoes, halved
- 1/4 cup continental parsley leaves, roughly chopped
- 1/4 small red onion, thinly sliced
- 2 tsp lemon juice
- Flatbreads, lemon wedges & extra virgin olive oil, to serve
- sea salt & black pepper
- 8 metal skewers
Tzatziki
- 1/2 Lebanese cucumber, grated
- 1 cup Greek yoghurt
- 1/2 clove garlic, minced
- 2 tsp lemon juice
- 1 tsp honey
- 2 sprigs fresh dill, chopped
